Herbal Garlic Spaghetti
Cook a pound of spaghetti or other pasta as usual. If you salt the water, then don't add salt to other ingredients. Reserve 1/2 cup of the pasta water before you drain the pasta.
While pasta is cooking, combine the following in a big bowl:
Package of grape tomatoes, halved or quartered
1/2 cup olive oil
1/2 cup red wine vinegar
diced onion
2 cloves garlic, minced
1 tsp salt (if you didn't salt the pasta water)
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp pepper
Any other ingredients that you like, such as zucchini, cooked chicken or shrimp, etc.
Add the reserved 1/2 cup pasta water and the cooked pasta, and toss. Garnish with parmesan cheese or whatever you like.
