Apple Stuffing

Here is my stuffing recipe that has evolved over the years. The onion and rosemary make it so fragrant!

1 cup sliced celery (I now substitute water chestnuts since I can't have celery)
1 cup chopped onion
1 stick butter
1 cup water
1 cup apple juice
14oz herb seasoned stuffing cubes
2 cups chopped apple
black pepper and rosemary to taste
other seasonings as desired (sage, bay leaves, etc)

In a large skillet, cook celery and onion in butter until tender. Add water.
In a large bowl, combine apple juice, stuffing cubes, and apple.
Now pour the wet ingredients into the dry.
Add seasoning to taste. The rosemary really makes it, so don't leave that out.

Stuff the turkey and put the rest of the stuffing in a greased baking dish. Bake at 350 for 30 minutes, or until hot. Refrigerate leftovers.
